Cold cucumber soup

Ingredients

Cucumber 1
Shallot 1
Garlic 1 clove
Bulgarian yogurt 500 ml
Fresh coriander 1 sprig
Fresh mint 2 sprigs
Salt
Pepper

Directions

  1. Slice the cucumber, the shallot and the clove of garlic into small pieces
  2. Mix everything in the blender with the Bulgarian yogurt until it has turned into a smooth substance
  3. Season with salt and pepper
  4. Serve in a tureen (let it get cold in the fridge first), garnish with mint leaves
