Ingredients: Ingredients for the ribs; 1 kilo spare ribs; 100 gr brown caster sugar; 30 gr paprika powder; 15 gr fine salt; 1 tbsp black pepper; 1 tbsp white pepper; 1 tbsp cayenne powder; 1 tbsp garlic powder; 1 tbsp onion powder; Ingredients for the barbecue sauce; 2 tbsp vegetable oil; 1 shredded onion; 2 shredded cloves of garlic; 1 tsp Worcertershiresauce; 1 tsp black pepper (crushed); 1 tsp chilipepper; 4 tbsp brown sugar; 4 tbsp syrop; 800 ml ketchup; 1 tbsp mustard; 2 tbsp vinegar; 1 tsp salt

Start with removing the membrane of the hollow side of the spare rib. Do this by using a knife to get the first corner loose, then you pull the membrane from the rib with your hands. Are your hands slippery? Try using some paper towel.
Mix all ingredients till there are no more lumps in the mixture. Then rub the marinade on the ribs and put them on a tray, cover them in foil and let them marinate in the fridge for at least four hours. The longer the better! (max 2 days)
Turn the temperature of the oven to 170 degrees. Take the spare ribs and put them on a baking tray with the hollow side down. Then add a layer of water to the baking tray so the meat can steam in the oven and become tender. The meat is ready after 2,5 hours. Finish with spreading some barbecue sauce on the ribs when you serve the ribs. (below is the recipe for barbecue sauce, it is also possible to buy this at a store.) It is also possible to first cook the spare ribs on the fire for an hour and a half and then put them in the aerofryer or oven for 10 minutes at 150 degrees. Then put some marinade in the water, and spread it again with the marinade when the spare ribs go into the aerofryer.
Take a pan and heat the oil, put the shredded onion in the pan and bake the onion till it turns transparent. Then add the garlic and stir so it does not burn.
Add the pepper, salt and chili pepper and stir till the mixture is red from the chili pepper. Now add the ketchup.
Add the rest of the ingredients one at a time and keep stirring in between. When everything is in the pan, let the sauce cook for 10 more minutes.
Now the sauce is finished. Let it cool down and store in a cool, dark and airtight place.
