1 egg
1 tbsp mustard
0,5 tsp salt
1 tbsp white wine vinegar
250 ml peanut oil
25 ml extra vierge olive oil


  1. Split the egg and put the egg yolk in a bowl. The egg white is not used in this recipe. Also add the mustard, vinegar and salt to the bowl. Beat with a whisk till you have a smooth batter.
  2. Real mayonnaise contains at least 80% oil, which we are now going to add. Keep beating the mixture with a whisk and add the peanut oil drop by drop.
  3. At last, also drop by drop, add the extra vierge oil. Do you find the sauce too thick? Just add some water.

Your mayonnaise is ready, enjoy!
