|1 tbsp mustard|
|0,5 tsp salt|
|1 tbsp white wine vinegar|
|250 ml peanut oil|
|25 ml extra vierge olive oil|
- Split the egg and put the egg yolk in a bowl. The egg white is not used in this recipe. Also add the mustard, vinegar and salt to the bowl. Beat with a whisk till you have a smooth batter.
- Real mayonnaise contains at least 80% oil, which we are now going to add. Keep beating the mixture with a whisk and add the peanut oil drop by drop.
- At last, also drop by drop, add the extra vierge oil. Do you find the sauce too thick? Just add some water.
Your mayonnaise is ready, enjoy!
